Lemon Blueberry Chia Pudding

Confession time: I am a HUUUGE fan of The Bachelor franchise. I've pretty much watched every season (except 1, the one with prince so-and-so), watched every Bachelor in Paradise & Bachelor Pad, seen the weddings & the babies, & follow these lovebirds on their socials. I guess you could say I'm pretty invested in this show. When there's a new season on it's my weekly shameless entertainment. Do you have one of these? If you don't you really gotta get one....

However, with all the recent transitions, life changes and business ventures starting up these past few months I almost missed that a new season was happening. That is until last week, so I had some serious binge-watching to do. Happy to say I'm all caught up, so now I can comment on the latest ( this would be waaaay to long a post to start from the beginning of the season, so let's just go with the latest shall we?)


This season it's all about Arie - Dutch stud from years past on Emily's season who fell head-over-heels but had his heart broken. I was actually really surprised he was the Bachelor - I mean couldn't they find anyone else? I'm not saying he's not attractive and an overall good guy, but it seemed a bit odd they had to go 8 seasons past to find a dude to take on this role. Weren't there plenty of heart throbs from more recent seasons to fill the gap? Chase, Luke, Dean, to name a few...maybe the men & the franchise have other plans for them. Le sigh!


I digress.....This past week Arie and the remaining gals were in Italy: beautiful, romantic Tuscany, and yet the dates this week all seemed a little boring. Walking through town, eating dinner with an Italian family, and sitting in a garden. Not that those aren't fine things to do for a first date, but come ABC! Previous seasons of the Bach had some pretty elaborate dates, so where is this show going? I'm still waiting for a date to wow me this season....


So 3 one-on-one dates and a dreaded group date this week. Becca K was up first, and they seem to have something going on. Something mediocre. I just don't feel it it with them. I usually have a pretty good gut feel for these tv romances, but these 2 are NOT it. After a mediocre date with some making out, he gives her a rose and seals the deal on meeting her family next week. Yipee. I still feel like I don't know a darn things about this girl, and we are 7 weeks into the show...


Next up is Lauren B, who just had a 1:1 date last week....which in Bachelor land is totally unfair. Those other women were pissed, let's be real. The whole date though was as boring as the week previous. Awkward silent moments with very little depth of conversation, and then at dinner when she finally voices how she's falling in love with him, Arie steps away to go walk through the trees. So weird and confusing! It looked as though he was just trying to find the words to let her go, then professes he's into her and wants to meet her family. I just. Don't. Get It.


The there was beautiful & intelligent Seinne. I think he was just intimidated by her and although they initially seemed to have a great connection, no amount of delicious pasta, wine and truffles would pull it together for them, and Arie sends her home. After picking up the rose and making it seem like he would give it to her - what a crappy move Arie!


Truthfully, the only person I think he has any serious magnetism with is 22-year old Bekah M, but it's obvious that a 14-year age gap is a pretty big hurdle for Arie to get over. I totally agree, because despite seeming to know herself at that tender age, how much life experience has she had at this point? At 22 I was in university stressing over Calculus and deciding what to wear to the next party, not dreaming up marriage with a 36 year old dude...maybe 22 year-olds are much more mature these days, I dunno....But it's a moot point, because at that uncomfortable 3:1 date, Arie sends Bekah packing, and another woman bites the dust. Leaving taxidermy-loving Kendall and Tia from Weiner, AK, to move forward to hometowns. At this point, my vote is for quirky Kendall, although I'm not feeling confident in any of them. It's so weird to be at Week 7 and feeling like he's not really into any of them...


Throughout the whole show thus far, I guess I just haven't felt a depth of emotion from Arie himself. He's talked about the "tough decisions" he's had to make, but they seem to have been waaay easier than he showed. And nothing I've seen so far has given me goose bumps or given me that electric/magnetic feeling when you see two people falling in love. I'm really hoping that things pick up these next 2 weeks, because well yeah....the show is pretty much over then lol. Come on Arie, don't let me down!

Lemon Blueberry Chia Pudding

Prep Time: 10 min | Total Time: 2+hours or overnight | Makes: 1 serving

Ingredients:

  • ¼ cup chia seeds

  • 1 cup almond milk

  • 1 scoop protein powder

  • 1 Tablespoon maple syrup

  • ½ cup blueberries

  • 2 Tablespoons pumpkin seeds

  • Zest from 1 lemon - worth the work, trust me!

Instructions:

  1. Place all ingredients into a Mason jar or sealable glass jar, and shake vigorously for 3-4 minutes. Place in the fridge for at least 2hr or overnight.
