If you've landed on this recipe it's probably because you're like me and LOVE pancakes and LOVE bananas too! Or the little monkeys in your life love them. Or both lol.
The first time I made these for Aiden I also gave a little bit to my then 8-month old Damian, and they both went bananas!🍌 (it's gonna be punny this post hehe!).
It's such a fail-proof yummy recipe, and it's perfect for those slow Sunday brunch mornings. Cue Jack Johnson: "I'll make you banana pancakes, pretend like it's the weekend..."
Ahhhhhh!!! OK before we get to the recipe, a quick update on little D and his helmet. We saw the head doctor this week and she said his head is really taking shape, and that he'll only need it for about 6 more weeks!! We are honestly SO thrilled, and the time has passed so quickly with him wearing it.
In case you're new or just catching up, Damian has had plagiocephaly since around 3 months old - aka flat head syndrome. He HATED tummy time and spent so much time on his back he developed a flat spot that needed to be corrected. Luckily it had no impact on his brain development and was purely aesthetic, but still we wanted to correct it for him while we still could.
So really great news, and we feel so grateful for all the amazing care he's received at both Shriner's Children's Hospital and St. Justine's here in Montreal.
In other news, I'm going bananas and getting a splitting headache trying to get D to sleep. Lately he's taken forever to get to sleep (eg bedtime 7:30pm but not asleep until 9pm) and as we speak he's sitting in the bouncer playing and is on nap strike (it's 1:30pm)....so I'm also a bit pooped and need some light at the ned of this tunnel. Send help, or words of encouragement, yellowwwww! 😂
Maybe a batch of these delicious pancakes will help us all feel better? Ok yep, I've decided: IT WILL! And perfect timing because we've got 5 amazingly ripe bananas just waiting to be made into fluffy, melt-in-your-mouth little pancakes of joy.

Fluffy Banana Pancakes
Prep Time: 10 min
Cook Time: 20 min
Total Time: 30 min
Makes: 10 medium-sized pancakes (~4 servings)
Ingredients:
1 ½ cups all-purpose flour, spooned and levelled*
2 teaspoons baking powder
½ teaspoon baking soda
1 tablespoon cinnamon
¼ teaspoon sea salt
¼ teaspoon ground nutmeg
2 medium bananas, mashed (~1 cups worth)
1 large egg
⅔ cup milk of choice
1 ½ teaspoons vanilla extract
2 tablespoons butter, divided, to coat the pan
Topping suggestions:
Greek yogurt
Maple syrup
Bananas, sliced
Berries, sliced
Instructions:
In a large mixing bowl, place the flour, baking powder, baking soda, cinnamon, salt, and nutmeg, and stir to combine.
In a medium bowl, whisk together the mashed banana, egg, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined.*
Heat a nonstick skillet to medium-low heat and add 1 teaspoon of butter to coat the pan. Use a ⅓-cup scoop to pour the batter into the skillet. Cook the pancakes for 2 to 3 minutes per side, or until they’re puffed and are golden brown on both sides.
Serve with your favourite fruit, Greek yogurt for added protein, and a drizzle of maple syrup. YUM!
*NOTES:
FLUFFINESS: spooning and levelling your flour, as well as mixing until just combined, ensure a fluffy pancake
ADD PROTEIN: You can use Greek yogurt to top your pancakes OR you can sub out 1/4-1/2 cup of flour for plain/vanilla whey protein. Please note when you sub in whey protein it may effect the fluffiness factor as these are two different macros!
MAKE IT GLUTEN-FREE: Use a gluten-free flour like Bob's Red Mill. Still delicious!|
ADD-INs: you can add chopped walnuts and/or chocolate chips at the last step, by folding it gently into the batter. YUM!
