So here we are, already in May, and we've just completed the third LIVE round of The FitMama Method! I seriously can't believe how fast it's flown by. It's always bittersweet shifting gears into the next season of things....but here we are, and I'm ready for a change!
Speaking of change - it's FINALLY feeling like spring here in Montreal, even though we had a freak final snow fall the day before my birthday. And speaking of birthdays, I gotta share something with you.
As birthdays have come and gone, I've never really "felt like was older"....until now. And maybe it's just because I've just had Damian, or maybe because it's just time, but although in my mind I don't feel older than 28, my body is feeling more aches and stiffness that I haven't previously felt. Like I'm actually 38 lol. Like I need to be seeing a chiro /physio/massage therapist on the regular to help me manage my body. God that sounds so old lol
But in all seriousness, yes, I am older and I DO have to - GET to - take care of it more so that I'm functional and capable into my golden years. So I'm now on the hunt for these people to have as my self-care care team. SO if you're local to Montreal, particularly the west island, and you have some referrals, I am all ears!
I think I'm realizing more and more that regular body work - especially if you are regularly physically active and exercising - is a pretty foundational thing, just like warm-up and cool-down. It gets into those areas of our body we can't access all that well, and allows us to recover and rejuvenate in deeper ways than stretching or a bath can do for us.
So consider this your PSA if you haven't been doing this for yourself, to start and see how it feels in your overall self-care routine. And of course, keep me posted so I can hear what kind of impact its making for YOU and your goals!
Ok let's get to the food already!
The last few weeks, I've been craving Caprese, which is pesto + tomato + mozzarella cheese. I saw these Pinterest videos lately with layered chicken toppings baked in the oven and I knew I had to try this. Especially because it so dang easy + quick!
On weeknights when life is very busy, ya need EASY + QUICK so as to appease the hangry children and tackle other things.
We tried this Baked Caprese Chicken a few ways, so I'll share a few options below. It's delicious and a crowd pleaser, so be sure to add it to your rotation!

Baked Caprese Chicken
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Ingredients:
4 chicken breasts, rinsed and patted dry with paper towel
4 tablespoons pesto
1 large tomato, sliced
1 large mozzarella ball, sliced OR 1/2 cup grated cheese of choice
Sea salt and black pepper, to taste
Instructions:
Preheat oven to convect bake at 400°Fahrenheit/205°Celsius.
Once you've rinsed and dried the chicken, place in a deep baking dish. Season with salt and pepper on both sides.
Add 1 tablespoon pesto on each breast and spread (for food safety, ensure you dish out the pesto FIRST from the jar before using that same spoon to spread!).
Add tomatoes slices on top. Then add grated cheese or mozzarella on top.
Bake in the oven for 30 minutes, or until chicken is fully cooked through*.
Serve your Caprese Chicken with roasted or mashed potatoes, and add some steamed veggies on the side for an easy, balanced meal!
*NOTES:
Cook time will depend on the thickness of your chicken breast. Thicker breasts will require more cook time - I always check by cutting through the thickest part of one breast, and the meat should no longer be pink on the inside.
